Sweet Dreams

I've already been back at work today and have no idea when the next holiday will be... In the meantime I think I will enjoy some Drømmekage, Dream cake I tasted in Denmark. Here is how to bake one:




For the Cake: 
250g all-purpose flour (plain flour) 
3 tsp. baking powder 
50g butter 
200ml milk 
4 eggs 
300g granulated sugar 
1 tsp. vanilla extract 

For the Topping: 
125g  butter, softened to room temperature 
50ml milk 
100g dessicated coconut 
200-250g muscavado sugar, or light brown sugar

Instructions:
For the Topping: 
In a mixing bowl, combine all topping ingredients. Set aside until ready to spread over cake. 

For the Cake: 
Preheat oven to 200 degrees C. Grease an 20-22cm square or round baking pan. If desired, line baking pan with parchment paper, then grease paper. 

Sift the flour with the baking powder. Melt the 50g butter and mix with the 200ml milk. Beat the eggs with the sugar and vanilla extract until light and fluffy, then fold in the flour mixture. Lastly, fold in the butter and milk mixture. Pour into prepared baking pan and bake in preheated oven for about 20 minutes or until wooden pick inserted into center of cake comes out clean (leave oven on and set to 225 degrees C. Remove cake from oven and immediately spread the topping over cake and bake cake for an additional 5-10 minutes at 225 degrees C. Cool cake completely on wire cooling rack before serving. Cut cake into squares (or wedges, if baking cake in a round pan). 

Makes 12-16 servings.

In the zoo

As intended I visited the zoo today. Luckily the weather was better than expected so the visit was enjoyable. I walked the way to the zoo but on my way back I took a bus all the way to Norreport station and walked around Rosenborg Castle, National Museum of Art and Botanical Gardens mostly in search of more signs of  the spring and managed to see more blossoms.

I walked back to the hotel through the city center again as I wanted to go for a cake in The Royal Cafe. I saw this cafe recommended somewhere and got interested in the interiors. And it really was pretty and a little bit quirky, too! Can also recommend the cakes.

Now it looks like that I will miss Glyptoteket again as it's not open tomorrow and tomorrow is my last day... Something to save till next time then. Depending on the weather it will either be the insides of the Rosenborgh Castle or Danish Design Center tomorrow I'll think.

Greetings from Copenhagen

So here I am! I arrived yesterday afternoon at then rainy Copenhagen. After a short walk with my umbrella I  just spent most of the time in my hotel room. I have to admit I wasn't totally prepared to the weather and have been missing my winter coat... Also this morning there was a cold wind and it was snowing for a while. Before the noon the sky cleared and I got to enjoy sunshine. Today I haven been walking around the city center snapping photos and visiting mostly interior design shops. I really do like the colourful things available here!

Tomorrow the plant to visit the zoo and then spend the afternoon in Glyptoteket. The weather should be alright at least in the morning so hopefully I will get to see lots of animals!

Oops, how time flies...

Just two days to go! I haven't actually been concentrating on my coming trip that much during these past two weeks as there has been other things going on. At one point I even thought that I would need to cancel the trip. But no. Copenhagen is calling! I just checked the forecast and it seems to have gotten chillier there as it has here in Finland. And there might even be snow showers! It will be what it will be, can't worry about that :) It's a  break anyway!

The hotel I will be staying at is Clarion Collection Hotel Mayfair which is located close to railway station (and Tivoli) so it's within a handy distance when I arrive by train from the airport. (Unfortunately the Tivoli isn't open just yet so this time I will miss it. I can really recommend visiting Tivoli Gardens. It's a must especially at the dusk as it will become beautifully litten.)



Now I need to everything packed, the next update will then be from the Wonderful Copenhagen!

Planning

As mentioned in my previous post my next trip will be to Copenhagen, Denmark. I'll be going there at Easter for 3 nights. I have already been there once but that was 10 years ago for a shorter weekend. Then I went there by train from Gothenburg, Sweden, where I was staying and working for a summer. Now I've been browsing the photos from that visit to remind me of where I've been and where I would like to go this time. (The idea was also to scan a couple of photos here but couldn't get that to work...) I have also been googling like crazy (as always) to get some ideas. So far this is what I have come up with:

- Rosenborg Castle (I saw this castle from outside last time and now I want to see what's inside, too. Looks like interesting place to visit.)
Copenhagen Zoo (Been here already last time but want to see the animals again, maybe get some better photos than last time.)
Glyptoteket (Interesting art museum in a beautiful building, also great place to visit if the weather isn't that good.)

Otherwise the idea is just to stroll around and take it easy. Hopefully will also make some new finds for home on Saturday when the stores will be open. (Luckily that's the only day the stores are open during my visit so I can really concentrate on something else!) There really is so much to see and do in this beautiful city!

The hotel for my stay is provisionally booked but will tell more about where I'm going stay later as I'm still eyeing for any late offers.
